Food producers try to meet consumer expectations and offer food made from sometimes already forgotten raw materials. One of such raw materials is an extremely valuable and beneficial – oat. Oats – one of the healthiest cereals, rich in bioactive ingredients, and thus extremely valuable for human health, is classified as a functional food. What is hidden in the composition of oats and determines its nutritional attractiveness?
The dominant fraction are essential fatty acids (EFAs), which are not produced by the human body and must be supplied with food. The composition of oat fat includes oleic, linoleic and α-linolenic acid, as well as long-chain forms such as eicosapentaenoic acid, docosahexaenoic acid and arachidonic acid.
